I have noticed a plethora of car covers out there. Can anyone recommend a "top of the line" outdoor car cover?

I have a Noah carcover that I bought from Car Cover World (http://www.carcoverworld.com). It's been used on my coupe all winter long and has done a great job.
This site has darned near everything you ever wanted to know about car covers and offers from very good brand names (Noah, Weathershield, Evolution, Technalon, etc.
Once you decide which one you want, check out the vendors on Corvette Forum for some good pricing alternatives.
One other point for your consideration. Some come with grommets to secure the cover to the car. Be sure and get one of these. I purchased a cable for mine and got a nice lock to go with it. This reduces the opportunity for theft and helps (but doesn't prevent) the car cover from being blown off in strong winds.

I second everything MagRed said. I also have a Noah with a cable and lock...has worked very well so far.[:)]

One thing you might want to consider about the cable and lock, in some cases the wind causes the cover to blow off the car. When this happens the wind can cause the cable to twist and the LOCK will scratch the paint. TO prevent this, I used a felt cover over the lock, like a bagge with a little bit of foam rubber around the lock. This prevented the lock from scratching the paint.
Covers like everything come for different uses, so beware not all covers are the same. Check out the California Cover Company Web site. Most of the vendors buy their covers from them, as the are the largest makers of covers (for high end cars) in the country. Even GROITS Garage buys their covers from them. They have a great chart that explains the different cover material and their advantages and disadvantages. Remember buy a cover is not a simple process, is it a dust cover, weather cover, can it protect against ICE when it freezes and refreezes. All of the charts explain this.
Secondly, the 3M Evolution product is one of the best for outside storage, as some covers are nylon or silky. This type of cover WILL stratch the paint, you will start to see little tiny scratches cause from the cover reacting to the wind. I am sure you have seen you cover bellow out during the wind. Secondly, the 3M evolution dries much quicker then the silking times, as they have a layers of fiber the absorbs much of the water and keeps it OFF the paint.
If you start to see excessive dust gathering on your car you did not see when you cover was new, this is the actual cover breaking down. Time to replace it. The Outside covers if used for outside storage are only good for about 3-4 years, depending up the freezing and refreezing process.
So for going on, but been their for many years and wanted to share my experiences with you.....check out California Covers and the go into a lot of detail..... BTW the Wolf Covers you see sold around, read the box, they are DUST covers not really intended to be used year round.
